Madroño honey

Natural honey whose majority composition comes from the nectar of the flowers os Madroño (Arbutus unedo), a species of shrub belonging to the Arbutus genus in the Ericaceae family. It is a bitter honey produced and collected in autumn/winter in the southwestern mountains of Asturias, in the natural park of the “Fuentes del Narcea, Degaña e Ibias”.

The flowering of the Strawberry tree (Arbutus unedo) takes place in late autumn and winter, coinciding in time with the ripening of the fruits from the previous year’s flowers

Madroño Honey

Strawberry tree honey has antiseptic, astringent, healing, anti-inflammatory and antihemorrhagic properties.

COLOR
Amber to dark amber.

SCENT
Floral with a component of leaf litter, mushrooms and humus.

TASTE
Bitter dominance with salty notes.

FEEL
 Crystallization is generally rapid and often defective due to its high humidity.

Crystallized honey is a sign of its quality. To decrystallize, gently heat it below 45º to avoid damaging its properties. The ideal storage for honey is at room temperature, in a cool and dry location

.

GASTRONOMIC USES:
This honey pairs well in making honey vinegar, or as an accompaniment to pork and vegetables
